For the Steak:
500g Scotch fillet steak
Salt and black pepper, to taste
2 tablespoons olive oil
For the Mushroom Sauce:
150g button mushrooms, sliced
1 shallot, finely chopped
2 cloves garlic, minced
1 tablespoon butter
1 cup beef bone broth
1/2 cup Lewis Road Creamery organic single cream
Salt and black pepper, to taste
Fresh parsley, chopped (for garnish)
For the Vegetable Kebabs:
2 red onions
2 red capsicums
2 courgettes
2 tablespoons olive oil
Salt and black pepper, to taste
Wooden skewers, soaked in water for 30 minutes
For Serving:
Garlic dinner rolls (heat in the oven as per package instructions)
1. Season the Scotch fillet steak generously with salt and black pepper on both sides.
2. In a large skillet or on a grill pan over medium-high heat, heat 1 tablespoon of olive oil.
3. While the skillet is heating, cut the red onions, red capsicums, and courgettes into chunks.
4. Cook the steak for about 3-4 minutes per side for medium-rare, or until cooked to your desired doneness. For BBQ option: Preheat your BBQ to high heat and grill the steak for the same amount of time.
5. In a skillet over medium heat, melt the butter. Add the sliced mushrooms, chopped shallot, and minced garlic. Sauté until the mushrooms are browned and tender, about 5-7 minutes.
6. While the mushrooms are sautéing, thread the vegetables onto the soaked wooden skewers, alternating between different types for variety.
7. Pour in the beef bone broth to the mushrooms and bring to a simmer. Let it cook for 5 minutes to reduce slightly.
8. Brush the vegetable kebabs with olive oil and season with salt and black pepper.
9. Stir in the Lewis Road Creamery organic single cream to the mushroom sauce and simmer for another 2-3 minutes until the sauce is creamy. Season with salt and black pepper to taste.
10. Cook the kebabs on a preheated grill or BBQ over medium-high heat, turning occasionally, until the vegetables are tender and slightly charred, about 10-15 minutes.
11. Arrange the cooked steak on plates and spoon the mushroom sauce over the top. Sprinkle with freshly chopped parsley for garnish.
12. Serve the vegetable kebabs alongside the steak.
13. Heat the garlic dinner rolls in the oven as per package instructions and serve them warm on the side.
