1/3c buttermilk
1T dijon mustard
500g chicken wings
2/3c plain flour
2T sesame seeds
1t baking powder
1t garlic, minced
1t smoked paprika
1t salt
1/2t black pepper
1/2T olive oil
1. Mix the buttermilk and mustard in a shallow dish. Add the chicken wings and coat with the mixture. Cover the dish and refrigerate overnight.
2. Preheat the oven to 200C and line a baking tray with baking paper.
3. Mix the flour, sesame seeds, baking powder, garlic, paprika, salt and pepper in a large ziplock bag. Add the chicken wings, two at a time, and shake to coat.
4. Place the wings onto the prepared baking tray and bake for 30 minutes. Half way through the cooking, brush the wings with the olive oil.
