Ingredients
  • 8 slices Gourmet Streaky Bacon 
  • 4 slices sourdough bread, toasted
  • 2 eggs (fried to your preference)
  • 1 avocado, mashed
  • 2 large red onions, thinly sliced
  • 2 tbsp butter from 
  • 1 tbsp brown sugar
  • 1 tbsp balsamic vinegar
  • BBQ sauce, for drizzling (optional)
  • Salt & pepper, to taste
  • Handful of rocket leaves
Cooking Instructions
  • Caramelise the onions:

    • In a frying pan, melt 1 tbsp butter over medium heat.
    • Add the sliced onions and cook, stirring occasionally, for about 15 minutes until soft and golden.
    • Add the brown sugar and balsamic vinegar, stir well, and cook for another 5-7 minutes until the onions are sticky and caramelised. Set aside.
  • Cook the bacon:

    • In a separate pan, fry the bacon over medium-high heat until crispy. Set aside on a paper towel to drain excess oil.
  • Prepare the eggs:

    • Fry the eggs in the same pan, seasoning with salt and pepper. Cook until the whites are set and the yolks remain runny.
  • Toast the sourdough:

    • While the eggs are frying, butter the sourdough slices lightly and toast until golden.
  • Assemble the sandwich:

    • Spread mashed avocado on two slices of the toasted sourdough.
    • Layer on the crispy bacon, fried egg, caramelised onions, and a handful of rocket leaves.
    • Optionally, drizzle with BBQ sauce for extra flavour.
  • Finish and serve:

    • Top with the remaining sourdough slices, cut in half, and enjoy this indulgent sandwich packed with flavour.
