Ingredients
- Good quality bakery buns
- 500g Chicken Tenderloins
- 1 portion of our tandoori marinade
- 1 small cucumber ribboned
- ½ red onions thinly sliced
- Coriander leaves
- 1 portion of our herby yoghurt sauce
Marinade ingredients:
- 2 Tbsps. natural yoghurt
- 4 Tbsps. good quality tandoori paste
- Juice of ½ a lemon
- 3 cloves minced garlic
- 3 Tbsps. chopped coriander stem (you will use the leaves in the burgers)
- Salt/pepper
Herby Yoghurt sauce ingredients:
- 1 cup natural plain yoghurt or Greek yoghurt
- ½ clove finely minced garlic
- Juice of ½ lemon
- ½ tsp. lemon zest
- 4 Tbsps. mixed chopped herbs (we used coriander and mint)
- Salt/pepper
Cooking Instructions
Prepare the Tandoori marinade:
Mix the below ingredients together:
- 2 Tbsps. natural yoghurt
- 4 Tbsps. good quality tandoori paste
- Juice of ½ a lemon
- 3 cloves minced garlic
- 3 Tbsps. chopped coriander stem (you will use the leaves in the burgers)
- Salt/pepper
Marinate the Chicken:
- Coat the chicken tenderloins thoroughly with the tandoori marinade.
- Place the marinated chicken in the refrigerator for 30 minutes.
Preheat the Oven:
- Preheat your oven to 180 degrees Celsius. Alternatively, you can also use a BBQ for cooking.
Prepare the Herby Yoghurt Sauce:
- Mix the below ingredients in a bowl:
- 1 cup natural plain yoghurt or Greek yoghurt
- ½ clove finely minced garlic
- Juice of ½ lemon
- ½ tsp. lemon zest
- 4 Tbsps. mixed chopped herbs (we used coriander and mint)
- Salt/pepper
Prepare the Vegetables:
- Get your vegetables ready for serving with the buns.
Cook the Chicken:
- Place the marinated chicken tenderloins in an ovenproof baking dish.
- Bake in the preheated oven for 20 minutes.
Toast the Buns:
- While the chicken is cooking, slice your buns in half.
- Place them under the grill to lightly toast them. Be sure to keep an eye on them as they can toast quickly.
Assemble and Serve:
- Once the chicken is cooked and the buns are toasted, assemble your dish.
- Add the chicken tenderloins, herby yoghurt sauce, and prepared vegetables to the buns.
