500g Beef mince
1 can chopped tomatoes
1 onion, diced
1½ tsp Pepper & Me Taco Tuesday (or Taco seasoning)
1½ cups grated cheese
12 soft small flour tortillas
12 standard hard shell tortillas
Dude ranch:
½ cup sour cream
1 Tbsp Pepper & Me Dude Ranch
1 tsp lemon of Lime juice
To Serve
2 cups shredded Iceberg lettuce
Pepper & Me Ding Dong Hot sauce
Homemade guacamole (optional)
Saute the onion in a little oil for 5 minutes then add your beef mince and cook over a medium high heat until it's browned and cooked through
Add the Taco Tuesday, can of tomatoes and ¼ cup of water, stir to combine. Cook for a further 5 minutes.
Place your soft tacos on a baking tray and cover with the grated cheese of your choice
Place hard taco on one side of the soft taco and bake for 5 minutes for 180C
Take tacos out of the oven and glue the melty cheese side of the soft taco to the exposed side of the hard taco
In a small bowl add half a cup of sour cream, dude ranch and lemon or lime juice, and stir vigorously to form a sauce.
Fill your double layer cheesy tacos with shredded lettuce, your mince mixture on top with the yummy dude ranch dip and ding dong. Enjoy!
