500g boneless chicken thighs
3 Tbsp hoisin sauce
3 Tbsp light soy sauce (use half if using dark soy sauce)
½ cup water
2 Tbsp honey or brown sugar
2 Tbsp Gotcha Good
2 Tbsp cornflour
2 Tbsp Blow My Coals
Drizzle the thighs with a little oil and sprinkle over Blow My Coals to coat
Sear the thighs for a minute or 2 on each side over a medium-high heat in a casserole dish
Add in water, soy sauce, Gotcha Good & honey to the dish and mix well. Cover with a lid and pop in the oven at 180C fan bake.
Bake for one hour, you can turn off half way through if you like and leave in the oven. Cooking in this way will give you tender fall apart thighs.
Remove from the oven and carefully lift the thighs out of the sauce and pull apart or roughly chop. Set aside for a minute. Mix cornflour with a little water and pour into the sauce. Pop the casserole dish back on the stove on a medium heat to thicken, it should only take a minute to thicken and go glossy. Return chicken to the sauce.
Serve the chicken over rice, with some mayonnaise and vegetables. Garnish with TikTok.
